The Red Hen opened its doors in September, 2008, just as the country entered a time of economic upheaval. We weren’t sure what to expect, to be honest. Could a fine dining restaurant in a little town in the Shenandoah Valley of Virginia survive? Could we sustain our commitment to providing excellent dishes built on the finest local ingredients, when buying off a delivery truck was so much easier and cheaper? Would we find a loyal clientele to enjoy good food and personalized service in our cozy, 26-seat historic red-brick building?
